“Run like me, like hell, like everybody else.”-New Politics

IMG_4711Oye vey, Monday. Why you gotta be so hot? Have I said that I can’t wait for fall weather yet? And fall boots and brews? And hoodies? Hell, I’d even settle for 70 and sunny. Ok…I gotta stop. What I’m most excited for is to be able to run more than three miles without wanting to pass out. Running Manayunk’s hills is brutal enough when it’s cool, but add all the heat and humidity, and you’re in for a sweatfest.

On Thursday, I decided to cook for the boys. They already know that I can make some mean stuffed shells and meatballs, but I decided it was time to mix up the menu a little bit. I whipped up my mama’s enchilada recipe. It was super easy and absolutely yummy. Here’s the dish:

  • 1 pound of chicken tenderloin
  • 1 fajita seasoning mix
  • 1 pepper
  • 1 onion
  • 1 pack of whole wheat tortillas
  • Shredded Mexican cheese mix
  • Salsa and/or taco sauce
  • Guacamole and sour cream for toppings

Directions

  1. Cook onions and peppers with a tablespoon of olive oil
  2. Grill chicken and add fajita seasoning
  3. Combine chicken, onions and peppers
  4. Fill tortilla with a spoonful of chicken, peppers and onions
  5. Add cheese and salsa/taco sauce
  6. Wrap up tortillas and place in casserole dish
  7. Top with salsa and cheese
  8. Bake for 30 minutes at 350 degrees

Top with a little guac and sour cream and you’re set. If you’re feeling extra adventurous, mix up a homemade margarita and you have the perfect Mexican Monday dinner. Cheers, yous guys!
