AHHHH!!! SOME SUPER EXCITING NEWS! My family is finally, officially, signed-sealed-delivered, moving back to Philly! This has been a few years in the making and I’m excited beyond words. I literally ran around last night like a chicken with my head cut off and then fell down in panic from the idea of packing up my apartment. Moving is so fun, but so stressful. Oh well. Did I mention we’re going to be a hop, skip, and jump away from the Italian Market aka heaven? Oh yes. Be jealous.
So the other night was date night…and I attempted to cook dinner. Let’s just say it didn’t go as planned. I was going to make this recipe for baked chicken bruschetta. It looked yummy, was super easy, and oh so healthy. All I had to do was toss some whole wheat croutons in with a little garlic and diced peppers, pour it on top of the chicken, sprinkle some parmesan, and bake for 30 minutes. Well, as I was pre-heating my oven, my smoke alarm started to go off because my entire apartment was FILLED with smoke. Apparently my oven doesn’t wanna work after 2 years of putting up with my shenanigans (just another reason I’m stoked to move). So I ended up grilling the chicken and putting the bruschetta on top of it. It was good, but it definitely would have been better baked. Mike still ate it though. And took leftovers. I guess it wasn’t all that bad. Here’s the original recipe if you wanna try.
I finally got around to writing up a meal plan for training, so I’ll definitely be posting that soon. Happy hump day 🙂
